Chocolate-Coated Date & Cashew Energy Balls

This is my favourite healthy-ish sweet treat. It’s a really simple no-bake recipe, and it’s packed with fibre, healthy fats and protein thanks to the combination of sweet dates and cashew nuts. The chocolate coating makes it a perfect dessert when you’re craving something sweet but still want something nutritious.

Ingredients

  • 1 ½  dl (about ⅔ cup) of cashew nuts
  • 250 g of soft pitted dates
  • 150 g dark chocolate
  • 1 tbsp vegetable oil / olive oil

Preparation

  1. Crush the cashew nuts in a food processor. Add the dates and blend them as well.
  2. Make sure that the date-nut crumble is well mixed, and form small balls of them with your hands.
  3. Put the balls in the fridge for 30 mins.
  4. Melt the dark chocolate. Once it’s melted, add olive oil or vegetable oil and mix it with the chocolate, to water down the consistency a little.
  5. Dip the date-nut balls in the melted chocolate and put them on a cutting board covered with baking paper. Garnish each ball with crumbled cashew nuts before the chocolate hardens.
  6. Put the chocolate covered balls in the fridge for at least another 30 mins.

I usually just eyeball the ingredients, so the amounts are not too specific. The only important thing is to have the date-nut crumble to be sticky enough, in order to form the balls. You can see from the pictures below, what the desired consistency looks like. (: Usually there will be some nut crumble left in the food processor that can’t be formed into balls, so I use that for garnishing.
