The Tastiest Spicy Rice Tuna Salad

This recipe is my go-to lunch, because it’s so easy and fast to make, tastes amazing, and is quite affordable! It is also very easy to modify to your liking by changing up the vegetables, the protein or the spices. I prepare the salad directly in the bowl I’m going to eat from, since I always prepare just one serving at a time.

Ingredients

  • any type of lettuce
  • cucumber
  • tomatoes
  • bell pepper
  • canned tuna (I use chunks in oil)
  • white rice
  • frozen peas
  • frozen corn
  • sriracha
  • (herbed) sea salt
  • lemon pepper

Preparation

  1. Wash your rice and prepare it according to the package instructions.
  2. Cut your lettuce, cucumber, tomatoes and bell pepper and put them in a bowl.
  3. Use the oil from the tuna can for frying the frozen peas and corn in a pan. When they are warmed up, you can add the cooked rice to the pan.
  4. Add sriracha to the rice mix and stir it in.
  5. Add the tuna and the rice mix to the salad bowl and mix.
  6. Add the herbed sea salt and lemon pepper to your salad and mix again.

I didn’t put specific measurements for the ingredients, since I always just eyeball it. But usually I make 1 dl of rice (about 0,4 cups) and put the rest of the rice mix (containing the peas, corn and sriracha) in the fridge for later. I use about half a can of tuna (75g or 2.6 ounces) for one serving.
