This is my favourite healthy-ish sweet treat. It’s a really simple no-bake recipe, and it’s packed with fibre, healthy fats and protein thanks to the combination of sweet dates and cashew nuts. The chocolate coating makes it a perfect dessert when you’re craving something sweet but still want something nutritious.

Ingredients
- 1 ½ dl (about ⅔ cup) of cashew nuts
- 250 g of soft pitted dates
- 150 g dark chocolate
- 1 tbsp vegetable oil / olive oil
Preparation
- Crush the cashew nuts in a food processor. Add the dates and blend them as well.
- Make sure that the date-nut crumble is well mixed, and form small balls of them with your hands.
- Put the balls in the fridge for 30 mins.
- Melt the dark chocolate. Once it’s melted, add olive oil or vegetable oil and mix it with the chocolate, to water down the consistency a little.
- Dip the date-nut balls in the melted chocolate and put them on a cutting board covered with baking paper. Garnish each ball with crumbled cashew nuts before the chocolate hardens.
- Put the chocolate covered balls in the fridge for at least another 30 mins.
I usually just eyeball the ingredients, so the amounts are not too specific. The only important thing is to have the date-nut crumble to be sticky enough, in order to form the balls. You can see from the pictures below, what the desired consistency looks like. (: Usually there will be some nut crumble left in the food processor that can’t be formed into balls, so I use that for garnishing.
